I am in a weird mood. Maybe because I am stressed about my coughing kiddo. Missing the hubby who is at work and I just wanna play hookie for a day. Or just because it’s one of those days when I am in a weird mood where I ponder weird things. So here is my weird moment…



I love Tomatoes. I don’t like the skin. Is that bizarre? I always get looks. I buy tomatoes and eat one every day for lunch. I love heirloom tomatoes. A good tomato sits on the counter and warms up before you eat it. A better tomato is fresh from the garden. (hard to get hear with the heat and the birds, and varmints) Mozarella tomato and balsamic vinegar yum. Tomatoes under the broiler on a piece of gluten free toast with a little cheese on top. Yum. Spaghetti rice Noodles with olive oil, feta cheese, turkey sausage cut up in chunks, chopped green onions and you guessed it… tomatoes. Oh double whammy yum for a delish meal. But the skin ugh. I don’t like it at all. I plant cherry tomatoes because folks can grab them and go. My kiddo loves them in that way. Me I am not a fan of the cherry tomato. Why? Because well… you guessed it… to much skin!

Oh Chris I'm the same way. Love them just wish they had less or softer skin.

We plant the cherry or grape ones for the same grab and go snacks. When I watched kids for a few summers I never got one after they found them, they kept them picked clean. ;) After that they grew them from seeds, planted and watered them. The parents thought this was awesome. :D

hahah. i just sliced an heirloom tomato and ate it Lori. yum.

and don't you not like cheese to? or just tomato. Mexi food is not your friend I am sure. :)

I like to roast them on the BBQ and make a smokey salsa, much yummy. I like them in grilles cheese sammies with mushrooms and swiss. I like to stuff them with rice and grilled chicken.

I craved them when I was preggers and now my oldest just loves them

My best summertime salad is.

cherry tomatoes
feta cheese
fresh corn
onion
basil
tossed with red wine vinegar and olive oil.

cook the onion after chopping into small pieces. throw in the fresh corn on top and cook.
mean while slice tomatoes in half or quarters
throw in feta cheese on top
add the cooked corn and onion and a sprinkle of basil
toss with sprinkle of red wine vinegar and olive oil.

serve warm.

yum. corn season and I buy it fresh chop it off the cob and eat it in this salad. yum yum

was a sunset magazine recipe. might be more ingredients but that is how I make it after many times of doing so.

Wow, I love tomatoes, I just picked up some at the store for dinner. Roma's and plum tomatoes. Im growning some in the garden but they are not ready yet.

I am going to plant the seeds from these tomatoes so I will have a ton of plants and have enough tomatoes to can.

I love, Stewed tomatoes with Okra onions over rice. Now that is good southern eats. Even more special with a piece of fried cat fish.

Now, no one else in my family eat tomatoes so they are all mine. LOL

I love, love, LOVE big, red, juicy COLD tomatoes! Those beefsteak tomatoes are the best! I could make a sandwich JUST out of those! Love them on salads, too. NOT the beefsteak...tomatoes in general. That recipe sounds yummy! I'll have to try that! Thanks! :D

No so weird Lori. We have farmer friend that can't eat corn off the cob. yaks every time, so we cut his off the cob then he is all good. He also grows loads of tomatoes for salsa and spaghetti sauce, he hates them (tomatoes, salsa and spaghetti) loves pizza and ketchup. See your not so weird Lori!

He gives us all the free tomatoes we want. My hubby also helps him farm and plow snow. ;)
